A vacuum sealer for sous vide isn’t necessary. Water displacement method with ziplocs is totally fine as long as you do it correctly. The extra couple little bubbles of air using that method vs having a dedicated vacuum sealer really won’t affect the heat dispersion of the water.

As SeymoreBunsen (great name) said steak really only needs about an hour or even 45mins in the bath to heat through. Then it’s a sear for a minute each side and voila. Pork chops are about the same.
