I believe that’s more about taste and size and sustainability - the natural life cycle of the oyster has them small and un-yummy during the summer. Since most oysters are farmed now it’s sort of irrelevant.

I bartended an event recently that had an assortment of bottled beers. Over and over people would come up and say they didn’t care what they got, as long as it wasn’t an IPA.
