An iOS update is relevant to about 100 million iPhone users worldwide. Far more relevant today than virtually any other tech issue. This is not a niche issue. That's why there's so many articles.

Under iOS 7 (at least with the built-in apps and YouTube) the device will keep AirPlaying video when it goes to sleep. I guess that is one of the benefits of i0S7 multitasking.
