A whole pound of bacon! Seriously, it’s good for your skillet and it cooks perfectly. Also this roast chicken recipe is amazeballs and it only takes an hour. Save some of the bacon grease and make hash browns in the skillet.

I make this spatchcocked roast chicken every few weeks and it is always absolutely amazing. So easy (and fast), too!

Have you seen Brooklyn? It’s not your typical movie but I really enjoyed it. The cinematography and costuming were excellent and every actor was just perfect in their role. Soairise (sp?) Ronan in particular was excellent. In other movies with Domnhall Gleeson: I loved Ex Machina.
