So I looked up the California law on this and it seems you could theoretically be sued for defamation for any untrue and damaging statement you make to anyone else that you claim is a fact, it doesn’t matter if the conversation was private.

If it’s written to a third party, a "false statement of fact" and could cause harm to the one it’s made against. That’s really all libel/defamation takes. The public figure component would have required proving malice, a much higher standard.
