I work with kids with autism and a lot of the times we are just so thankful that they are eating enough that we don't really stress about what they are eating.

You're not exaggerating by much! My son used to only eat white things when he was younger. He's moved on, luckily (although plain pasta is still a must). Most of these guys have been only "the diet" for a long time which meant just about everything was made at home by mom and they're used to it. Our experiment with it…
