The Matfer has removable blades to do various width sticks (julienne, batonette, et al). They aren’t really easy to sharpen, but they aren’t too expensive to replace. I do believe it’s NSA certified as well
I have a Matfer that I picked up about a decade ago and it still works well. It has a removable blade that I have put to a stone. They are pretty expensive though. I use a Japanese Benriner at work and it’s pretty awesome. Only $25 and very sharp
