yeah, I also have a patience problem and had to learn the hard way that medium-high is the highest you want to go with pancakes. medium is actually usually plenty on my stove.
Gosh, I had no idea frying pancakes in butter was even a thing?? I’ve always used veggie oil spray. Even so, the first pancake is always a hot mess. I should probably start with medium high instead of high but that takes longer and I want pancakes NOW, dang it!

I love the idea of a French onion soup casserole. Large crouton and cheese topping, carmelized onions in a wine and beef broth! I’d think some form of noodle to make it casserolic. Egg noodles? Would speatzle hold up?
