Potatoes (without the skins) are mostly starch, with little other nutritive value (which is mostly in the skins).

The only problem with that idea was, until DS9, there was no overlap between the stories - you had TOS/TAS, then an 80-year gap until TNG...then they stayed in the 24th century but in varied locations (TNG/DS9/Voy), then back to the 22nd century for Enterprise.
