The scenario you describe is not what the owner of Bristol Spirit is complaining about - she’s complaining about people ordering food but only water to drink with it, which is not at all uncommon. She simply has a terrible business model and is blaming the customers when it’s her own fault.
The problem is their own terrible / unsustainable business model; they aren’t even taking enough of a fee from the pop-ups to cover the cost of the remodeling they did to accommodate them.
