+1 for PureText! It's set for Windows-V, so then Ctrl-V is with, and Windows-V is without.

Personally, I haven't had any issue with the Voice Dialing. Both on the iPhone 4 without Siri, and now with the 4S with Siri, about 80% of my calls have been placed using this feature.
