Got to try this. I’ve had some issues with post sous-vide searing...drying out the meat while trying to get a good crust. It may be because I have an induction cooktop....gas is so much better for this kind of thing.

I have one from Poly Science that I like quite a lot. My only issue with it is that it takes up a lot of counter space, but I’ll deal with that.

Yep. I like onion, celery, and green pepper in meatloaf, but with all that veginess, it’s really important to chop everything quite small, then sauté in a bit of butter with a little salt to draw out and evaporate the moisture.
