Yes. Most sous vide recipes will give you a range of times. In this case, your steak will be done after two hours, but you can leave it at the same temp for an additional two hours without a negative impact on texture. Anything beyond that and it could get mushy.

I made soups vide duck for Xmas dinner this year. Cooked the breasts to medium then seared in a skillet. Very good, but it didn’t touch the scrumptious legs that I left in the circulator for 8 hours, lounging in spiced duck fat. Such an easy way to make duck confit.

This weekend I made the Bon Appetit recipe for pork tenderloin with green curry. Instead of roasting it, I put it in the souls vide bath with the marinade and left it at 145 for a little over an hour, then I seared it in a very hot pan. It was definitely a keeper.
