Not quite the same, but I do this with a braised short rib dish, and can say a crockpot doesn’t quite do the trick. With the oven, you’re able to use a drier heat to intensify the flavor. I braise potatoes, kale, and black eyed peas along with my short ribs, and it’s like smoking crack from a pipe made out of heroin.

I know what I’ll be doing with my tomatoes next summer!
