Not just the eggs, but I also use the bacon grease to make hash browns (using the recipe from this very site). Unless I’m making a large amount of bacon, this will usually be enough to use up all the grease.

If you ever do fried chickpeas (for a salad ingredient, or as a snack in general), I suggest adding some sumac near the end of frying. Za’atar works well as well, but that makes sense as sumac is an ingredient in za’atar.

Honestly, I wouldn’t even use a balsamic glaze/reduction. If you have good tomatoes and fresh mozzarella, you’re taking away from it by masking it with sweetness.
