I grew up eating farina, and I recall as a kid my favorite part was when it would dry up in the pan and I’d take chunks of it and dip it in sugar.

Because of social distancing, instead of going to the grocery store or weekend farmers market 3-4 times a week, I now go to the supermarket once every 2 weeks. I like to microwave dried peppers instead of toasting them in a skillet. Hit it for two 15 second intervals and they come out perfect. I’ve accidentally done it for longer, and yeah, that capsaicin really gets you.

I had gotten it years ago (I think based off of SeriousEats’ recommendation) but treated it like a regular flour, and I was put off of it because of the cost. If I should only be using it sparingly, I should reconsider. I really want to try it for searing fish.

Do you add it to the skin side only, or coat the whole piece of fish?

Are you doing the baking in cast-iron?
I do, and I’ll get the dough shrinking again generally when I add oil, so I usually stretch the dough before so it’s larger than the pan, then I’ll add oil and will get it to fit better. I bake at 525, which is the hottest my oven will get without setting it to broiler.
