I’m not talking about heating it. I’m talking about aging a cheese for 6+ months. There’s no lactose in an aged cheese. 

Lactose breaks down over time, so cheddar is usually not an issue for lactose intolerant people. It’s more the fresh cheeses and dairy products that need to be avoided.

I’ve had this happen. Do you sit at the bar of a restaurant often? Even striking up a tiny amount of small talk is enough that, when mixing a drink and there’s a little left over (enough to fit in a shotglass), they’ve given me this. 

Deep fried pork belly cubes. It’s very big in latin american food. I remember hurting my teeth as a kid on some skin that was waay too hard.

Coconut ice cream is good. For homemade versions, usually it’s used as a way to make vegan ice cream, using coconut cream instead of making a custard. You’ll usually see it paired with other flavors. I’ve done a mounds bar (coconut and chocolate) and coconut and lime. I’m sure other tropical flavors would work great

A local place made a coffee ice cream that straight up tasted like espresso. It was amazing. Most coffee ice cream tastes more like coffee milk. It’s good, but not the same.

Damn, this looks good! Lamb is one of the few meats I eat, so I’m always looking to add to my recipe list. This one’s getting made this weekend.

Ketchup belongs on a burger if the burger needs it. My preference is BBQ sauce, as that’ll give you the same sweet component, and in general some kind of condiment is needed so it’s not a dry experience. But if ketchup is there, I’ll use it.
