The old way of making bagels was truly horrible on the workers.  Super hot, humid steamy kitchen.  Windows all fogged up.  As a customer I know this is the place to get the best bagels, but wouldn’t want to work in there.

You’re comparing apples and oranges though. What is the physical size of Oslo? What is the physical size of Sonoma County? It’s SUPER easy to reduce traffic deaths by getting rid of cars when you don’t actually NEED cars because you can walk everywhere in a tiny city.
