Meat and produce has to be physically handled constantly throughout the day by both shoppers and employees (hourly reports on temp for food safety are required) - a lock would just be a giant pain in the ass and slow things up. I would slap my kid with a smartphone just to prevent this bullshit whining over “phone anxiety”. Yes, social anxiety about speaking on the phone is a real thing. But at some point you’re going to have to get over it, especially once you start working.
The old buildings were never the point. It was just an effective solution to a social need. What gentrification does is price low income people out of areas deemed to be ripe for business - it took a necessity (cheap housing for the working class) and turned it into a commodity (trendy housing for the upper class).
One thing my city does well (or did well) is that it likes to flip their older buildings into affordable housing and office spaces instead of demolishing them. My childhood apartment was in a converted stone mansion built in the late 1880's.
