Well Malvo is Mephistopheles, so screwing with people is just what he does. He sees the world in a very unique way and gets enjoyment from pushing people and seeing how they react. Money is a secondary consideration to him since he could easily make it doing something legitimate.

There is absolutely no reason to root for Lester. Even when he was wimp getting picked it on it was clearly his fault for never learning how to stand up for himself in ways that don't involve murdering people.
