I'd imagine the beats being off was intentional for the most part. The writers wanted us in the headspace of identifying with feeling discomforted without blatantly telling us what was going on before Gretchen and Lindsay's conversation.
I've always felt Jugulum would have almost worked better if the witches weren't involved at all. All the parts I find memorable about that one come from Oats and Igor, I feel like it would have made a fantastic stand-alone with Oats as a protagonist, a'la Small Gods or The Truth.
You're right about Cranston. I think it has to do with a difference between actors who do better in a slow-burning build of establishing a character and actors who can get the whole of a personality across in a shorter time. Can you imagine Breaking Bad's character development working across a movie?
