You are super correct. I'm always surprised by how many people think this is the place to complain about the service they received from someone usually trying to do their best.
I think he meant that the server should have paid the first $25 of the bill with the gift certificate, and the last $15 in cash, leaving $5 change (in cash). Not the reverse and then $5 left on the certificate.
