I think there was another Catholic school that was a little more close-minded, but their science department wasn't caught up in that.
Though, let's not forget that "just a theory" is a misinterpretation of the meaning of theory in this context. Gravity is also "just a theory". You should properly explain the scientific method alongside teaching the science.

That might depend on the place as much as on the Catholicism. My high school "religion" teacher, also a local pastor, was actually fired for telling people what to think, and the class was reformed as a philosophy class.
There was a CryEngine game similar in gameplay but not as bombastically anti-establishment as this called Nexuiz some time back. That was pretty fun. More akin to Quake 3 than UT, and this appears to be more UT2k4.
