I like to smoke pork chops instead of grilling them.  Brine the chops in brown sugar and salt (with a little bourbon) for a few hours, then smoke for 25 minutes with the wood of your choice.  (Hickory or mesquite works, but I also like fruit woods.)  Then, direct-grill for 3-5 minutes per side to finish the cooking…
