I don’t think you’re missing anything, I think for a long time Amazon was denying that they were doing it (which seemed highly unlikely).  Now they are finally admitting to it.  

If you want to make it look right, you’re going to need to do multiple coats of compound and sand between them.  30 minutes to sand typical joint compound is probably not enough time.  If you sand it when it’s still wet, you’re going to get chunks and drag them through and make a mess.
