I SO SO SO miss Salerno mint cremes. Kept in the fridge (or freezer) the mint filling was hard and crackable, rather than soft and mushy, and they were the BEST. I haven’t seen them on store shelves in decades, and assumed they stopped making them.

You know another good place for solar? Parking lots. Everybody hates coming out and getting in an oven after their car has only sat for a half a hour. Cover that parking lot with solar. Bonus! It keeps our cars cooler. You can either throw that power into the grid, OR use it to charge electric cars.
