The Shake Shack chicken sandwich is probably my second favorite of the chain sandwiches (Popeyes #1 of course). If it weren’t so damn expensive and a little smaller than most, it might be #1 - it has some serious crunch and deep savoriness.

You’d probably have to use isomalt (a sugar substitute used in hard candies). Isomalt doesn’t caramelize, though, so you’d have to add caramel flavoring and coloring. Which makes it not this recipe, sorry.

I think the point is that “scientists” don’t generally name geographic features, except when very recently discovered (submersibles, bits of Antarctica), and even then it’s generally “explorers” and “governments” that standardize the names. Hello, Falklands/Malvinas!

Volumetrically, presumably. Normally, a finer texture means more salt per volume, but perhaps that changes when you get small enough?
