My absolute favorite hot sauce is Bat’s Brew by Panola. Habanero and Jalapeno, vinegar and lemon oil - it’s absolutely delicious. I simply can’t eat gumbo without a healthy glug of Bat’s Brew.

You ended up making something close to a spicy tonkatsu sauce - ketchup, an umami source (usually Worcestershire, but in this case soy), mustard and spice. I’ve made a “ketchup, soy and mustard plus stuff” sauce in the past that sounds very close to Sauce.
There’s another one in a basement, I think, but yeah - not a lot of Arby’s in the city. Or the North Burbs, for that matter (one in Niles, another in Arlington Heights maybe?). To the extent that there is an Arby’s Zone in Chicagoland it’s the Southwest Burbs.
