In the same vein, I make lemonade pink by adding cranberry juice. About 1/3 cup per 2 quarts of lemonade. Looks great and adds some nice flavor.

I think you missed a step in there. In the paragraph that begins with, “Meanwhile, heat the oil in a large, wide pan with a lid over medium-low heat.”, there’s nothing about adding the eggplant. how to cut them up, etc. 

I forgot to pre-poke one the last time I actually baked one. When I grabbed it, it exploded, all over the oven. I will not forget again.

I think that’s a larger niche than you think. I baked a loaf of banana bran bread on Monday and it’s almost all gone now.
