Sounds very similar to the Mpemba effect.

“Mpemba effect”, aka water is weird. Basicly as soon as the first crystals form, your whole water will freeze very rapidly. You want your liquid to stay liquid below the freezeing temperature, so the gasses can escape, also known as supercooling.

There is an excellent episode of the NatGeo show Going Deep with David Rees that goes in depth about freezing the perfect icecube. The cloudy middle is a much discussed issue.
