Healthy and very versatile. I use it as a substitute all the time — with tuna instead of mayo, with baked potatoes instead of butter, on sandwiches instead of dressings.

Quicker, with less prep and clean up: use a plain hummus. :)

YES. I did a big vegetable overhaul to try to find new (to me) and better vegetable treatments, and it went a long way to making my kids like vegetables more. My kids eat spinach without difficulty now because I tried making it Asian style, they’ll eat bean sprouts in their ramen, and spaghetti squash with meat/pasta
