I would say in the Southeast it is pretty common to have shredded cheese served on the side for people to add as they please (along with sour cream, pico, and other things I don’t put on my fajitas).

There is a question of if you should pick it up all for fear if injuring it. As I said I think the natural response is to pick it up from the center instead of the back. The dumb thing about it is there would still be room for the tax prep industry. First of course for complicated tax situations where this wouldn’t be suitable. Secondly they could offer services for helping and double checking the IRS work.
Isn’t it only your state taxes that would be due this month? Technically your Federal taxes should still be due next month.
As a technical point long as you don’t owe, you can put off filing your taxes as long you want (funny how they don’t mind holding on to your money for you, interest free).

I’ve never had a restaurant (or any other business really) explain why they are charging more before - why start now? I much rather be able to look and know what I’m paying instead of being surprised with an arbitrary fee. Either the price is acceptable or it isn’t.
I hate add-on fees. Either put it in the price or don’t charge it. Don’t deceive me and put it in at the end when I can’t decide one way or another if I want to pay the new price.
