I think the really difference is that Cholula was first introduced to the US in Texas, whereas Tapatio originates in California. As a TX->CA transplant these distinctions truly haunt me.
In Cali, Tapatío is more readily available. Plus, its flavors are richer than Cholula b/c it’s more garlic-based, where Cholula is more vinegar-based. It just tastes closer to mami’s salsa.
