I’m not vegan, but yeah, I agree all these options sound not great. Curry’s a good way to go, or pasta primavera, or a stir-fry. There’s plenty of vegan umami offerings out there for seasoning that aren’t imitation meats or cheeses. Best bet is mushrooms though, mushrooms are the best for so many reasons.
