I actually made a quiche very similar to that back when I was a broke grad student. Quiche was a weekly thing. Keeping a freezer stocked with puff pastry and a couple dozen eggs in the fridge was very cheap, same with canned foods and frozen vegetables. That sandwich looks absolutely anemic, and like it was cooked in a George Foreman grill.

I’m a fan of Sean Brock’s recipe. It has some cream cheese, but any flattening is nicely offset by the addition of a vinegar based hot sauce and some pickles/pickle brine.
