I’m combing through Google right now. It was in an anthology text about life, death, and the afterlife, with stories like “Satan and Sam Shay” and “Thus I Refute Beelzy” and “The Grey Ones”.

This is far too much like the plot of a short story I once read, which, for the life of me I can’t remember the title to. Basically humans have found out a way to “cheat” death by digitizing their consciousness just prior to death. No one has actually died for 10000 years when one of the life-support servers crashes…
