I think you hit the nail on the head, the XT wasn't just the fastest trim, it was the most luxurious. Leather, heated seats, power everything, panoramic double sunroof, etc.
Like the pedant said, it’s mostly among the WRX/STI crowd. I have an 08 Outback XT and every now and then I’ll get a wave from a WRX but most of the time I fly under their radar despite my scoop.
