I have a similar problem with that myself - we have a contractor bidding us a remodel as an option to buying another place and I’ve told him I need 10 feet of clear ceiling in the garage. I may just get a stand-alone detached garage next to the house, it’ll probably be cheaper than modifying the existing space.
