Here in Tex-Mex land, it's pretty common to see lime and hot sauce on potato chips. Why not orange and hot sauce? Slightly milder twang, sounds nice... And orange tooth paste is great.

It is playable with just the WiiMote, but I (and almost everyone ever) recommends against it.
Man, yes. This and all of this. Maybe except the classic mode niggle. It is for completionists. Same with 3starMK. It isn't for non-perfectionists, and it gives a higher difficulty level to players who want it, while making it a non-essential feat, leaving the game accessible to beginners and pros alike.
