My fav in Chicago is Glenn’s Diner in Ravenswood. They incorporate seafood and it’s awesome! Best crab cake benedict I’ve ever had and the bloody mary’s have insanely huge shrimp.

Why not just put a tv screen on the pillar that shows what’s behind it from cameras on the opposite side, instead of projecting the image?

Exactly. That’s called basting. Way easier and more consistent than over easy. It’s much easier with a glass lid.
