I happen to be listening to the new Thrawn on audiobook, and while it might not be explicit elsewhere, the Empire’s human supremacy is still very explicit in the tie-in novels. Which are far more canonical than the old EU, I believe.
I have a bit more of a cynical read on it.

I think that was less to do with racism , and more to do with the fact they hired mostly* English actors to play the Imperials , and back in the 70s there were comparatively few black actors working in the UK.
I haven’t read everything in the current EU. However, it’s been a pretty big subtext that the Empire and First Order are all about human supremacy. I can’t recall seeing much about caring about the color of people.
Weird. This premise was in a movie that came out 3 years ago.
