i’m actually ok with all-white omelettes now, but i prefer having at least one yolk in there for tasty fatty reasons.

i wouldn’t go that far. but it’s one of those “the whole is better than the sum of its parts” kind of thing. it’s the mix that makes them good. all-whites or all-yolks omelettes are just not as good.

i’m just horrified that there is such a thing as an all-yolk omelette.
