I think you're asking the game to let you battle on your terms instead of the game's. What would a "simple" battle be? Base stats only?

Just catch or trade for a Ditto, then custom-breed and train a new Charmander. If you want to "cherish" the old Charmander, give it a special nickname.

Indeed. By the same logic, you may as well adjust the game mechanics so the base stats (Attack, etc.) can't be affected in any way, either (e.g., Protein). It's possible to "know" a Pokémon's IVs and EVs just as it's possible to know a Pokémon's Attack value. The only difference is what the game explicitly tells

A miscellaneous piece of advice; since Dragons seem to be especially popular go-to Pokémon in Wi-Fi battles, I would recommend training at least one Pokémon that can use Ice Beam well.

If people want a "fair chance," they can do the EV/IV research and work as hard as everyone else. I'm not altogether certain that players without Internet access would necessarily have any interest in competitive battling, anyway.
