It might not look like it from the in-car video but I’m sure she’s wearing a full suit too. Rally Valencia is an FIA event and they wouldn’t have been allowed to run otherwise. If you search for her name there are various pictures of her at different rallies and she always has a full suit on.

You make it sound like the owners are using these cars daily. In reality they probably see 200 miles a year tops, and will pollute less than Prius in their entire lifetime.
