(Oddly these emails were some of the most polite I’ve ever received, unlike the beef emails, which were quite rude).

I’ve never had a sweet potato explode like a regular potato. I’ve had them slowly split and some of the sugars ooze out and caramalize. The only cleanup is under the sweet potato and if you’ve lined your baking tray with foil, your cleanup consists of removing the foil and tossing it.

Another tip. If you want to check the potatoes, put on an oven mitt and give the largest potato a squeeze, if it is soft, all the others are all done, but you don’t need to rush to get them out of the oven. If your other item has a ways to go and you are worried about the potatoes burning, you can take the potatoes

Put some sour cream in a measuring cup, bowl or whatever. Add a little bit of the soup and whisk or stir. Add a little more, whisk some more. Repeat until it is thinned out a little, usually by the second or third time is plenty, then pour it into the soup while stirring the soup. That should keep it from curdling.

Try at least 375 or higher it should help a lot. I’ll usually throw the potatoes in the oven in the morning and set the oven for delayed start. If I’m baking other things in the oven I’ll put them in so that they are all finished at the same time. If the other item required a higher temp, 425- 450, crank up the temp

Same here. The kids won’t eat the skins, so I usually steal theirs too. Not only are they not unpleasant, they give a nice flavor contrast to the rest of the sweet potato.

Not only is it not weird, it’s wonderful. There was a restaurant years ago that had a vanilla vinaigrette that we craved like it was crack. We tried repeatedly to get the recipe but failed.
