Futurama ranks among my favourite shows ever, not just animated. It had more heart and more wit than 90% of shows ever made.
I love, love, love Metalocalypse. Archer is a top contender too, as is Venture Bros.
By minutes watched? Futurama. I've re-watched it like half a dozen times now.
The Venture Brothers is still my favorite show of all time to this day, it is that good.
Undone was really compelling.

Are we counting rotoscoping as animation? If so, it’s probably Undone with Rosa Salazar & Bob Odenkirk. Beautiful show with really great explorations of family and mental health. But if we’re sticking to the cartoon world, the Harley Quinn series makes me laugh more than just about anything else.
