I like those basic B&S rolls. They’re tasty enough to be worth eating, but not so overwhelming that they don’t play well with other flavors, and they sop up everything on the plate.

I usually put a layer of hash browns or cottage cheese under my eggs on the plate. Something that I already know will taste good with yolk, which can soak it up as needed. A bowl would be even better for this.
