Just like you mentioned, it all depends on the dish. Recently I’ve started to pull out my flake salt when I know I’m going to be salting something that sea salt might not stick to or bounce right off of like fries. I pull out the fancy grey sea salt for some crunch on top of ice cream. Kosher salt for basic day to day…

I have a 12 year old so tater tots are a weekly thing in the house.
I store bacon fat in a jelly jar in the freezer so it’s rock hard.
Take out said frozen bacon fat and use a microplane or a grater to shred up the fat on top of the tots in a sheet pan before hitting the oven for required cooking time.

That is indistinguishable from a video game.
