Maybe that's just what they did. Relied on practical effects, I mean, and just a tiny bit of CGI. But I might be completely wrong, and they just happen to have the most competent CGI team on TV. These two hypothesis are not mutually exclusive mind you.

I suppose it has more to do with the people designing the CGI. For all the money spent on CGI in Star Wars I, it looks really crappy now, whereas SW IV, V and VI still look rather good.
