Because they wanted the character to be the same as the one from the comic. And Iron fist's dynamic with Luke cage can't work the same way as the comics at all if she's an Asian woman instead of a white man.

Wrap your head around this. When Power rangers came out, (The original) they hired actors who had martial arts experience. They didn't do that for this show. Power rangers gave more thought to their fighting scenes than Iron fist.
